The best little (no bake) energy bites ever.

Thought I would share this little gem of a recipe with you.  These “energy bites” are quick and easy to make, and everyone loves them. They literally take 10 minutes to prep and kids can help because its really just dumping a bunch of stuff into a bowl and mixing it. Also, you can really make these right now because even if you don’t have all the ingredients, EVERYONE has peanut butter, old fashioned oats, and honey, right?

Alright, enough with the rambling, here’s the recipe. (Makes about 12)

1 cup oats

2/3cup unsweetened shredded coconut

1/2 cup Skippy natural peanut butter (this is the brand/style that I prefer). You can use any brand you like but I highly discourage using a natural peanut butter that you have to stir, these styles are too messy and don’t really hold the bites together well.

1/3 cup of honey

1/4 cup of unsweetened cocoa powder or chocolate chips

2 tablespoon chia seeds (optional) I add these for a little extra crunch and the fiber/protein content in them isn’t too shabby either.

Method: Dump all ingredients into a mixing bowl and mix together well.  Chill for about 20-30 minutes and then roll into 1-inch diameter balls.  Store on the counter or in the fridge if they are going to last more than a day (I highly doubt that they will unless you double the recipe). I like to eat one of these pre-workout or just whenever. Enjoy!
