Easy Peasy Lemon Squeezy Salad + Dressing

Just wanted to stop in and say “hi” on this beautiful Memorial Day weekend.  I know a lot of you are probably going to BBQs this weekend or having some kind of get together involving food, so I just wanted to share with you a quick, easy, and super yummy salad that you can literally make in 5 minutes. Its is also great for a weeknight side dish.

Easy Peasy Lemon Squeezy Salad + Dressing (serves 2)

Ingredients:

-2 cups romaine lettuce or your lettuce of choice (I actually used shredded brussel sprouts but not everyone likes this, give it a try though if you like them raw)

-1 cup cherry tomatoes or some other small type of tomato, halfed or quatered depending on what you like

-1 cup red bell pepper chopped

-1/4 cup red onion

Dressing ingredients:

1 1/2 tablespoons olive oil

2 capfuls of apple cider vinegar

1/8-1/4 cup of crumbled goat cheese (you can use feta too but I find goat cheese to be creamier and hence better for the dressing)

Salt and pepper to taste

juice from 1/2 a Meyer lemon

METHOD:

Take a Tupperware or some other container that has a lid that seals tightly. Put dressing ingredients in the container first and then add salad ingredients.  Close container (make sure lid is one tight).  Shake until salad is coated in creamy, lemony goodness.  Serve immediately.
