Do you ever just throw some ingredients together and hope for the best? And then, as you are eating, realize you just created an amazing dish? That’s pretty much what happened with this salad recipe I’m about to share with you. It’s nothing fancy but oh my goodness, is it amazing!
This salad brings together one of my favorite flavors (curry spice) with one of my favorite toppings (goat cheese) and creates a flavor combo that is just different enough to get you out of your “same salad every day” rut.
I hope you enjoy it as much as I did.
Ingredients (serves 2)
-1/2 pound boneless/skinless chicken breast cut up into small strips
-2 cups romaine lettuce (cut up or you can buy the bagged lettuce that is already ready to go in small pieces)
-1 cup bell pepper (orange or red) sliced up into smallish pieces
-2-3 small prepared (cooked and peeled) beets quartered (I buy my beets pre-prepared at Trader Joes, you can obviously buy raw beets and prepare them yourself at home.
-1/2 cup crumbled goat cheese
2 tablespoons olive oil
2-3 cap fulls of apple cider vinegar
salt and pepper to taste
For chicken seasoning ( I didn’t measure any of this out so use to taste)
-curry spice (you can find this ANYWHERE)
-salt and pepper
Place chicken in a tupperware container that seals well. Add spices and olive oil and seal the container. Shake. Let it marinate for 10-20 minutes and then grill. I use a counter top Forman grill but an outdoor grill is good too. When the chicken is done, let it cool a little and then tear up into bite size pieces.
In a salad bowl add salad dressing ingredients and goat cheese. Then add lettuce, peppers, and beets. Last, add the chicken. Toss so that all the veggies and chicken get coated with the dressing.
